Rosé is a wine style that can, in principle, be made from any red grape variety. However, the best examples come from varieties that show bright red fruit flavours and floral aromas at lower ripeness – allowing for lower alcohol, vibrant acidity and freshness.
At Happs, we use handpicked Grenache and Tinta Cão for these reasons. The grapes are pressed together, with the juice fermented to dryness in old oak barrels using wild yeast. We stir the wine on lees to build complexity and texture, before an early bottling just in time for Spring.
The result is a dry, vibrant and textural rosé that’s made for warm days, shared tables and seasonal food.
Aroma:
Perfumed and expressive, with notes of rose petal, cherry and strawberry, lifted by hints of musk stick, pear, gunflint and fruit tingles.
Palate:
An elegant dry style with generous fruit flavour, soft acidity and a long finish. You’ll find strawberry, red cherry, raspberry and citrus, wrapped in texture and length. A perfect match for smoked salmon, goat’s cheese and sunny afternoons.
