This wine is made from Semillon from our Karridale vineyard and is left longer on the vine to achieve higher sugar levels. During this extended ripening period the grapes naturally become infected with Botrytis, the fungal cause of "noble rot". This can impart unique flavours such as ginger, marmalade, apricots and honey. After hand harvesting, the fruit is gently pressed, settled and fermented with aromatic yeast. The fermentation is arrested when the appropriate sugar/acid balance is achieved and the wine then bottled young to retain the fresh lifted characters of the variety.
AROMA: Fragrant and fruity, lifted aroma of grass, apricots, pineapple, tropical fruit, ripe fig and straw.
PALATE: A mouth-filling wine with juicy, tropical fruit flavours, fresh honey and typical grassy Semillon characters. The wine has obvious sweetness with long flavour and a refreshing crisp acid backbone.
VARIETY: 100% Semillon.
